Finding Joy

I read this on one of my blogs I keep up with and thought how perfect after my morning of listening to the boys play so nicely with each and being kind to one another. They must have played together for two hours upstairs. I treasure these moments because one day soon they will be gone! I laid in bed with my coffee listening to them. I take these moments in when I can because they give me joy and a time to remember that yes my task as a mother is tiring and your heart can be heavy with guilt but glimpse like these, bring me joy and this is why I do what I do and they I wouldn't trade it for any job in the world!

You can take joy in knowing your children will face uncertain days but with Christ they will always have hope!
As mothers with Christ we can always find hope in our weary days....

Malachi Study

Some of my girlfriends and I wanted to get together to take time from our busy schedules to dive into the Word and make it a meaningful study with great friends and fill a spiritual space in our lives that sometimes we just don't take for ourselves and connect with women that are in the same point in each other's lives. It means a lot to me because I had wanted to try to get this going last year and it kind of fell by the way side. I am thankful to my friend who has picked it up and scheduled it. If we make the time and schedule it on our calendars and commit, then it is a lot more likely to happen.
I have to admit, I always feel a little intimidated with others that are so knowledgable about The Bible. I am not one to memorize verses or quote scripture at a drop of a hat. I like my quiet time with it and to relect on what I have read.  To be quite honest, I didn't really start reading it until I moved here and I was going through a time in my life where I needed strength and guidance. I turned open my Bible and started to read after our move to North Carolina.  I have always been and considered myself a Christian but not diving into it deeper than just what I was getting on Sundays. We were starting a new life in a different part of the country with no family and no friends. Just me, my husband, and my kids. It has turned out wonderful and I know this was in our plans as a family. It took a lot of prayers that did get answered.  This is home....
Back to the study...and this is my notes after reading and my insight and I am still learning so hopefully it makes sense...
We are starting to look at the Book of Malachi.  You realize sometimes after reading certain pieces it is hard to be a good christian sometimes. (growing up Catholic I thought that is was almost impossible) The truth is hard to swallow. But in Malachi we learn his love is never broken.
As I did some researching after our first session. Malachi in Hebrew means messenger. Which leads us up to his role as a prophet from the Lord who will deliver God's message to the people. It is the last prophecy before the New Testament. He prophesied to the Jews who had returned from exhile. He warned them that they were neglecting and disobeying God. They were failing to believe that God really loved them. They were questioning their undue circumstances and not accounting for their wrongful actions. Therefore, they were straying from the Lord's path, not fully serving God. He came to promise God would save the righteous.
He was compared to John the Baptist who came 400 years later. He was the first to tell people about their sins and that they needed to change. God was pointing his finger back at the people through Malachi. They were not fully serving the Lord and falling short. It had become acceptable even among the priests. He reminds them that if they change their behavior and serve faithfully that all will become clear. God remembers us and he does not forget about us. He kept calling them back even though the Isrealites kept failing. It is about a love that never lets go...It is God's mercy upon us.
On our worst day God doesn't walk away from us.
His love for us is not determined by our performance no matter how many times we mess up.
God loves broken people.
Do you struggle to follow God consistently?
It is hard to follow God consistently. I know this to well after chasing around 3 busy boys...
Not only is it hard to attend church but also serving him by being the best person I can be because I am tired and worn out from repeating myself 50 times a day. I have been better at what I volunteer for because I have to decide if it is really going to make me feel better that I did do it and if I am not feeling this constent calling for it then I can probably leave that task for someone else to pick up. Time is limited so unfortunatly that mean picking and chosing. I will always chose my family so if it is at the expense of my family than it has to be put aside. When I am maxed out I can tell because my patience is almost nonexistent. All I can do at this stage in my life is try to serve God by being a good christian, good wife, good mother, and friend.
A last note....
I think of the wonderful gifts of children he has put into my life, are the little miracles in which he gives a glimpse of himself through my young children as they are just as forgiving of my sins and accept me for who I am just like he does. They also love me unconditionally. They pull me back in to remind me to change my behavior...

Christian+Mother=Servant

Malachi's call prompts us to live faithfully before God and offers hope that God is not yet through extending his mercy....

Exhausted

 
This about sums it up!!! Hockey is over! One word~Exhausted...
This is what we need!
I love how we have a HUGE sectional but they all love to cuddle with each other on the couch with their momma!
Charlie came home late from work to this and snapped the picture. I am thankful he did because these are will be some of my favorite memories to look back on!
(and yes we fell asleep watching a hockey game)
 
 

My Days In a Nutshell During Hockey Season

There was a contest that my mom entered me into through the NHL Hurricanes Hockey team. The contest was to nominate a hockey mom who you think deserves recognition for what she does during the hockey season. Thanks Mom and Dad! Dad also entered my name. The winner would receive two tickets and a car pass for a home game and 250$ towards a local professional cleaning service. Which would be nice to get for some spring cleaning!
So here is what my mom wrote and I thought I would post it here...It was kind of an eye opener when she had asked me to calculate how many miles I was doing. I never had sat down and done that before. It's no wonder the van looked like someone was living in it!

I am nominating a mom who has 3 busy boys (9,6, and 3) and trys to do it all. The boys do well in school,they are involved in many different sports, and church. The 6 year old plays for the Junior Hurricanes/RYHA program (he has been playing hockey since he was 3) and the now 3 year old plays hockey in Hillsborough and has been taking skating lessons for a year. She does this all with no help from grandparents, relatives, or nannies! All her family is in Minnesota and South Dakota. Her husband is a busy professional which makes it difficult for him to help out during hockey season. Here is a "schedule" of her days....

Monday-Friday- driving the boys to and from elementary school (because there is no bus)= 120 miles

Hockey practice/games:Thursday night/Saturday early practices with games on Sundays=260 miles
Preschooler 2 times a week to school and 1 time to his hockey lessons = 50 miles

Total Mileage per week (not counting errands) = 430 miles

AND OTHER RESPONSIBIBLITIES THAT ARE TAKEN CARE OF:

She's a runner and logs 20-30 miles per week

keeping a house clean, laundry (stinky hockey gear) clean and put away, and trying to keep everyone fed (which is a lot of food) while making sure everyone is is at their scheduled activity and if at home~sometimes serves as referere.

helping with homework and making sure bags and lunches are packed for school.

attends a Women's Bible Study Group

Volunteers at church and serves on committees
Volunteers at the boys school

Writes music, poetry, and keeps up a blog as much as she can and trying to teach herself how to play guitar
Team photographer for son's hockey team and keeps up the photo website for the families

Making sure the schedule is correct and husband is informed of what/when and where we will be if he can make it.

Taking care of the other son that has four legs.

and through this all still stays sane and manages to get some sleep!

Gnocchi Soup

I saw a package of gnocchi in the store today and it looked delicious....I bought it not really knowing what I was going to do with it.;

I have never made anything with gnocchi before but thought I had it at Olive Garden and thought it was good...I know~ my friend who is Italian has pointed out to me that Olive Garden really isn't Italian...I replied, yes I know ~I really need to get out more since that is all I had to compare it to! I figured it can't be that hard it is soup....so after searching the web for some recipes and reading a few I just kind of pieced a recipe together of my own. The one thing I did not have that would have went great with it was chicken. I cooked this in a slow cooker.

Spray your crockpot with Pam...

Ingredients:
1 box (32 Ounces) of Chicken Broth
1 can of cream of mushroom soup
4-5 Bay Leaves
1 Tablespoon of dry italian seasoning
1/2 Tablespon of minced Garlic
dashes of Salt/Pepper
1 cup of frozen peas
1 cup of frozen corn
1 small onion cut up
1 cup of carrots diced
(If I had celery and/or shredded up some chicken that would have been great to add to it)

Cook all this in crockpot for about 4-5 hours (carrots are tender) and about an hour before serving put in the package of Gnocchi.
Serve with some grated Parmesan cheese.

Back again...

So I will actually have some time to get back on my blog as we will have some much needed down time at home! The boys start their three week intersession break/spring break!
We are doing NOTHING! We had thought about driving down to Gainseville again, or go stay at Great Wolf Lodge for a weekend down by Charlotte but staying home and not having to do anything sounded much more pleasant! The boys actually like it and they get along so much better.
So hopefully, I will get some more time to write and/or blog over the next three weeks before the minivan hits the road again!

Today was the end of quarter awards assembly and both boys received outstanding artist awards from their art teacher. Hmmm... I will gladly claim that talent...They love being creative, drawing, painting, building or whatever it may be~they can come up with some pretty amazing things. I think having all of their supplies within reach whenever they want has helped them develop the love of writing/drawing. I just keep huge buckets of crayons, markers, glue sticks, paper, stickers, and coloring books in the office on the bookshelves so they can help themselves when they want. The paint they know to ask first:)! I don't really make a big fuss about them making the mess as long as they are enjoying it and using their little minds to create something they are proud of is fine with me. They usually help pick it up. Better than those darn video games! I have boxes of little creations stored away for safe keeping! I have framed some of them. I will treasure them when they are all grown up!

I was also very proud of their report cards. They have done wonderful this quarter!  Which is also amazing because for me it was one of the most tiring with hockey. They work hard.

Enough for now and I'll catch ya'll up on the happening in the Jacobson household and a few thoughts later on. I get to crawl into bed and sleep in tomorrow...well past 6 am at least!

The Asian Market

After the hockey tournament, which was played in Cary, our friend decided to take the boys and Charlie to the Asian Market. I guess it was nearby the rink. His wife and I took the two younger kids home and got brunch started and took the dogs for a walk.
On the way home, I started to wonder what in the heck is at an Asian Market that warranted a "field trip". I soon found out after they got home. It was like they were describing a field trip! It was things they have never seen or experienced before! I don't think I will ever go there....especially after today!

The boys told me of all the foods they tried which included horse meat, fish eggs, dried shrimp, whole dried minnows with eyes and everything. Then they saw fish heads cut up, duck, dried blood, squid, octopus, chicken feet, pig feet, and salted seaweed. They also have goat penis but they were out of that. GROSS!!!!!!!!!!

Well, after listening to them describe their "field trip" I decided to go back inside and see if my friend needed help getting brunch ready. Although, I wasn't to hungry after that story. She was cooking bacon and eggs. The men started the grill and put on some steak that they had me bring to them. So I figured we were just having steak, eggs, and bacon.

As I was sitting at the kitchen table having a conversation and drinking my bloody mary, I looked out at the grill at Charlie and his friend. I starred for awhile wondering if my eyes were playing tricks on me. Is that what I think it is..... Sure enough we went out there and opened the lid and there were chicken feet dangling on the grill nail and all. It was so disgusting! It looked like little hands being grilled.

This gives different meaning to chicken fingers....

The boys were so excited to say they tried it even though Charlie and I would not touch them.

Well, that was an interesting brunch that I can say I will never experience again! I still am quite amazed the boys tried them. They said it wasn't that bad and tasted like chicken.... they also liked what they called stinky sauce-it was fish sauce! Their cultural food experience was explored Sunday.
They definitely have some adventurous personalities! Charlie and I do as well, but we just couldn't get past the nails!!!!!!!!!!!!!!

I will stick with this at brunch!

We Are The Champions!

I was so proud of how Cooper and his team played Sunday. It was the last tournament with 5, 20 minute games against all the teams they have played through the season. They went 5-0! Undefeated! If they were actually part of the Canes Cup they would have been the U8 Intermediate champions. I love to see his determination and watch him play! He loves the game of hockey!
It was a great season. It is sad to see it come to an end with this group of kids. They played so good together. It also becomes part of a family since you spend so much time with each other at the rink and those early morning practices and games. You spend almost 6 months with them.
I know it is a huge commitment of time and money, but when your kid loves something and is actually pretty good at it, you want to foster that and encourage him to continue. To see him happy out there and that smile when he takes off the helmet because he's had fun out there playing the game it makes all the miles, time, early mornings, and money all worth it. Nothing could top that! Fortunately, we can continue to do it.
One would think youth hockey in North Carolina can't be that good....but with all the transplants that moved down here from New York and New Jersey they have some dads that are great coaches. Also with the NHL presence here in Raleigh has helped the sport of youth hockey grow. We knew some people that went back to Michigan for Christmas break and they put their kids in a holiday camp while they were there to visit. Their boys were skating better than most of the kids in the camp the same age in Michigan and when the director asked him where they were from he was floored to find out they were from NC!

Cheesy Baked Mac and Cheese

There are many different recipes I have tried for baked Mac and Cheese and I think this one is my favorite so sharing with you....
The Cheese sauce has a consistency of Broccoli Cheese Soup...
I had to modify a little bit with the ingredients I had on hand...
The recipe called for 1 ( 8 ounce) package of processed American Cheese~Velveeta).

***I did not have so I used 12 unwrapped Velveeta slices...and topped the dish with Bread Crumbs.

Ingredients:
2 Tablespoons of butter
1/4 cup finely chopped onion
2 Tablespoons all purpose flour
2 cups of milk
3/4 teaspoon of salt
1/2 teaspoon of dry mustard
1/4 teaspoon of black pepper
1 (8 ounce) package of elbow macaroni
2 cups of shredded sharp cheddar cheese
***1 (8 ounce) package of Velveeta cheese (cut into strips or cubes)

Directions:
1. Preheat oven to 350 degrees and spray dish with Pam.
2. Melt butter in a medium saucepan over heat and saute onion til tender. Stir in flour and cook 1 minute. Stir in milk, salt, pepper, and mustard, cook and stir frequently. Let mixture thicken and get bubbly.
3. Meanwhile boil noodles.
4. To the milk mixture ~add the cheeses. stir until all cheese melts.
5. Combine macaroni and cheese sauce in a greased baking dish. (can top with bread crumbs)
6. Bake at 350 for 30 minutes or hot and bubbly. Let cool and serve.

Can be made ahead....
