The boys love beef jerky and costs so much at the store for just a little bag and I have all these roasts in my deep freezer that need to be eaten! It's a great protein for them especially on the go or at games.
Most recipes call for round steak for flank steak but I need to use up my chuck roasts etc...
Here is a recipe I found and I used two of my chuck roasts that totaled about 4 pounds!
4-5 pound chuck roast
1 tsp Lemon Pepper
1 tsp black pepper
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp on montreal steak seasoning
1 cup of Braggs Amino (a soy sauce like product) (by worchester sauce in grocery store)
I also used a couple dashes of Tony's Creole seasoning
Thaw the meat for you to be able to cut. Cut off the bone and excess fat and tough parts. Cut it up in 1/10 inch thickness if needed mash with meat tenderizer if thick. put in the marinade for 24 hours.
Preheat oven to 170.
cover your cookie sheets with tin foil for easy clean up and place the racks on top. lay the meat out on top of the racks and put in oven.
Cook for 4-6 hours on 170. Thicker cuts can take longer. can open door the last hour. But if you have kids can keep closed... and just drys better.
Since I cooked mine until 9...I just left door open overnight and that worked great. nice and dry.
